Why I Love This Recipe

If there’s one food you can always find in our refrigerator, it’s hard boiled eggs. I usually buy a dozen every Sunday at the farmer’s market, boil them up as soon as we get home and then put a big bowl of them in the fridge. Packed with protein and iron, these little orbs are a favorite with everyone in our house, especially when they’re on the go. Hard boiled eggs are super versatile but one of our favorite recipes to make with them is egg salad. Here’s why:

How to Make an Egg Salad Sandwich

  • Combine all ingredients, besides the sandwich bread, in a bowl.
  • Toast bread until golden if desired.
  • Place filling on top of 2 pieces of bread and top with second pieces of bread to make sandwiches.

While I like to believe this egg salad recipe is unbeatable, don’t hesitate to experiment with substitutions to match your preferences or dietary requirements:

  • Mayonnaise: Opt for a lighter choice by substituting some mayo with Greek yogurt or mashed avocado. You can also use veganaise if you prefer.
  • More Add-Ins: Have fun with your ingredients and feel free to add what you love. Dijon mustard, grated carrots and capers would be great additions. People can get quite finicky about what goes in their egg salad, though, so know your audience!

  • Bring the water and eggs to a boil and then turn off the heat.
  • Allow the eggs to remain in the hot water for 10-12 minutes.

Ingredients  

  • 4 hard boiled eggs , chopped
  • 1 dill pickle , finely chopped
  • 3 tablespoons mayonnaise or vegannaise
