Pizza Stuffed Potatoes
Who doesn’t love pizza and baked potatoes? When combined, they create a mouth-watering dish that is easy to make, affordable and delicious – Pizza Stuffed Potatoes!
Why I Made This Recipe
Almost every Friday our family does pizza night! Over the years I’ve come up with tons of fun and unique ways to enjoy pizza to keep the kids guessing and these Pizza Stuffed Potatoes are my newest creation! They’re inspired by my Po-Tacos recipe but stuffed with all your favorite pizza toppings. I love this recipe because everyone can build their potato just how they like it – a perfect kid-friendly DIY meal.
Pizza Stuffed Potatoes – The Ingredients
- Russet Potatoes- For baked potatoes, I like to use russet potatoes because of their high starch content, which results in a fluffy, light and tender interior, and a crispy skin when baked.
- Pizza Sauce- Of course, you have to have pizza sauce for pizza stuffed potatoes! Marinara sauce also works if that’s what you have on hand
- Cheese- Mozzarella cheese is our favorite to use for this recipe as it’s the more classic choice for pizza, but feel free to use any type that you like or a combination.
- Toppings- This is where you get to have fun! Anything you like on your pizza – pepperoni, onions, peppers, mushrooms, cooked sausage – can be added to your pizza stuffed potatoes!
How to Make Pizza Stuffed Potatoes
- Bake the Potatoes: Wash the potatoes and use a fork to poke holes in either side. Bake at 400°F for 1 hour.
- Prep the Potatoes: Remove the potatoes from the oven. Cut down the center and mash potatoes with a fork.
- Add the Toppings: Divide the sauce and cheese evenly among the potatoes and add toppings of choice.
- Bake Again: Put the potatoes back in the oven for 5 minutes, until cheese is melted and golden brown.
Want to use a different potato? Go for it! I prefer russet because they hold up nicely, but you could easily use sweet potatoes if you wanted!

Pizza Stuffed Potatoes FAQs
- How do I know my baked potato is ready? The easiest way to check if a baked potato is ready is to use a fork or a sharp knife to pierce the potato. If the fork or knife easily slides all the way through the potato with little to no resistance, then it is fully cooked and ready to eat. You can also gently squeeze the potato to check for doneness; if it gives easily when you squeeze it, it’s likely done.
- Can I make this recipe vegan? Absolutely! Just use your favorite vegan cheese or leave the cheese out entirely and obviously top with tons of your favorite veggie toppings.
- What are some good sides to serve with this recipe? I love making a big salad like Winter Citrus Salad or Salad Platter to serve with these. Or you could do a nice Cauliflower Steak!

- 4 russet potatoes washed and fork holes poked in each end
- 1/2 cup pizza sauce or marinara sauce
- 1 cup mozzarella cheese
- Optional toppings: mini pepperonis, olives, peppers, mushrooms, basil, cooked sausage
- Baked potatoes at 400°F for 1 hour.
- Remove potatoes from the oven. Cut down the center and mash potatoes with a fork. Divide sauce, cheese and toppings evenly among the potatoes.
- Put potatoes back in the oven for 5 minutes until melted through.
