Red, White and Blue Parfaits

I can’t believe that the Fourth of July is right around the corner! Whenever we’re getting close to celebrating a major holiday I get excited about what I’m going to make and this Red, White and Blue Parfait might just be my favorite Independence Day Treat yet!

Growing up, I would always look forward to the Fourth of July for the fireworks and parades — but mainly, I would be most jazzed about all of the delicious, refreshing goodies that I knew would be served. Berries and strawberries have always been one of my favorite snack foods and this Red, White and Blue Parfait just immediately brings me back to my childhood.

The best part about this recipe is allowing kids to make it on their own. In fact, if you feel like sleeping in you can leave all the ingredients at eye level for your older kids so they can make them on their own. If you’re not so sure about leaving your kids in the kitchen on their own you can turn it into a fun activity to do as a family. I use big tubs of greek yogurt (plain or flavored yogurt works great too), bowls of washed berries and Grape Nuts, granola or other crunchy whole grain cereal you enjoy. When it’s hot outside and you want to eat a complete meal in a glass they’re the perfect choice. Every bite is creamy, crunchy and totally sweet!

If you get as excited about a theme as I do and want your Fourth of July spread to be all red, white and blue you have to add these to the menu along with Blue Corn Crusted Fish Sticks, Watermelon Star Bites, Magical Fruit Wands and Tomato Bruschetta for a spread no one will forget!

Ingredients
- 1 cup grape-nuts cereal
- 1 cup greek yogurt
- 1 cup raspberries
- 1 cup blueberries
Instructions
- In a glass or serving bowl, layer Grape-Nuts Cereal, Greek yogurt, raspberries, grape-nuts, Greek yogurt, and blueberries. Repeat in that order until you fill your glass or serving bowl.
